ZiwiPeak air drying process • Independent analysis of Air dry process compared to raw meat and freeze dry shows little degradation of protein – conducted by Agresearch June 2013 • Executive Summary • A pilot study was undertaken to understand how air-drying can impact on protein modifications within Ziwipeak products, by comparing raw, air-dried and freeze-dried meat products. • Advanced redox proteomics techniques were used to detect redox and associated amino acid modifications. • A determination of the levels of modifications (oxidative, heat-induced and Maillard) in the raw, air-dried and freeze-dried meat samples showed the following: • Very low levels of oxidative and heat-induced modifications suggesting a high degree of protein structural integrity in all three sample types. • Low levels of methionine oxidation in the freeze dried sample only, suggesting some degree of protein denaturation. Freeze drying can unfold proteins which may result in the exposure of methionine residues. Since this amino acid is readily oxidised, monitoring methionine modifications may be a useful indicator of any protein structural changes. • No evidence of common Maillard reaction products in any of the sample types. Maillard reactions (non-enzymatic reaction of proteins with reducing sugars) can impair nutritional value of food. Absence of common Maillard reaction products suggests nutritional integrity. • Monitoring the amount of semitryptic peptides revealed slightly higher levels of protein degradation in both the freeze-dried and air-dried meat samples when compared to the raw sample.
