Chemical reaction • The cells carries out many chemical reactions. A + B C +D reactants products
Enzymatic action • Enzymes are organic catalysts that speed metabolic reactions. • Most of the enzymes are proteins. • The reactants in an enzymatic chemical reaction are called substrates. E + S ES E + P
Enzymes have specific shape accommodating the shapes of their substrate. • Enzymes can be used over and over again. Active site
Enzyme's optimal conditions • The rate of an enzymatic reaction depends on conditions in the immediate environment • These conditions affect the shape of the enzyme and modify the active site and precise fit of an enzyme and its substrate • Factors influencing enzyme functions include temperature, PH, concentration of substrate and enzyme.
Enzyme denature • Any structural change in an enzyme may denature or destroy its effectiveness by altering the active site and slowing down the reaction. • Denatured enzymes may result from extreme temperature, extreme PH, or any environmental condition that fundamentally alters a protein's structure.
Goals of today's experiment • To examine enzyme specificity • To determine the optimal temperature for sucrosase • To determine the optimal PH for sucrosae • To compare enzyme performances under different concentrations
