Why Nutrition Education is Important at Compass House Nutrition and the nature of homelessness • Lack of food • Poorer Nutritional Status / Lack of Healthcare • Many homeless youth eat fewer meals per day • Malnutrition Risk How can we help as RD’s • Nutrition Education • Providing Resources • Food Pantries • Farmers markets

Initial Goals and Plan • Ensured Proper education level for handouts • Interactive (Pizza demonstration) • Speed- allowed time for discussion and questions • Make participants comfortable with asking questions • Stayed in the time allotted for presentation • Educate on Myplate 10 tips handouts
Learning Theories, Objectives, and Model Explained! • The group demonstrated cognitive learning theory • Formative evaluation • Through following the recipe and displaying their knowledge of the correct steps of preparation
Pre Assessment • Participant engagement • What vegetables do you like? • What grocery stores do you like to go to? • What are some challenges you face while shopping? • What do you normally do to get the best deal while shopping?
Performance/Learning Objective “After cooking demonstration participants will have acquired the knowledge to be able to follow the nutrient dense pita pizza recipe while being observed that they are following sequence with 80% accuracy”
Demonstration • First: Step by step pizza demonstration • Recipe provided • Participants prepared personal pizza following recipe steps
Group Pizza Preparation • ½ tsp Olive oil • 1 whole wheat pita round • 1/2-1/4c.Low sodium sauce • 1/4c. Shredded mozzarella • 1/2c. Sliced mushrooms • 1/2c. Fresh spinach • 1/2c. Sliced bell pepper
Formative Evaluation • Observing participants follow recipe and prepare pizza after demonstration • Assessing for adherence to sequence of recipe preparation • Expectation 80% accuracy
It was a Great SUCCESS!!! • The group had 80% success rate • Exhibited interest and enjoyment of the activity with discussion and question participation • The Compass House directors also loved our demo and welcomed us back anytime! • Had a majority of our participant speaking in change talk!
