  2. INTRODUCTION: • As a server working the special events at the San Diego Zoo, you must follow certain rules of etiquette about who to serve and when. Doing so will ensure that food is served appropriately to create a unique and memorable experience for our guests. • In order to serve food in the correct time (when) and order (who), you need to know: • how to use an Event Order • the sequence of events during a seated dinner service • the sequence of serving seated guests Special Events held at the San Diego Zoo require a blend of professionalism, customer service, and careful coordination to create a unique and memorable experience for our guests. During these events, you need to observe several rules of etiquette when interacting with guests and also be aware of the overall banquet timeline. Your knowledge and actions are vital to a smooth catered event. In this module, you will learn about how banquets are scheduled, when and what must be done at each interval during the night, and the appropriate serving order for seated guests.
