USDA Food Safety Requirements • Products must be U.S. produced and domestic origin • Meet all requirements of Food Safety and Inspection Service and Food and Drug Administration • Contractors must demonstrate ability to provide a safe, quality, and wholesome product prior to contract • Agricultural Marketing Service (AMS) examines operations to make sure they meet contract requirements • Contract quality assurance for some products
Food Safety Requirements, cont. • Vendors must be able to trace products • Product testing for microorganisms • Egg products, diced chicken, dried cranberries, dried cherries, trail mix, raw ground beef and bison, boneless beef, and raw ground turkey. • Zero tolerance for E. coli O157:H7and Salmonella • All canned fruits and vegetables—14 day hold • All fruit and vegetable suppliers must pass annual facility audit • All fresh fruit and vegetable suppliers must pass annual Good Agricultural Practices/Good Handling Practices

Food Recalls • USDA Foods only; represents 15-20% of food used by schools • Richard B.
