  2. Fluffy Japanese pancakes are notoriously popular for its soft and spongy nature! This is also one prominent quality that distinguishes them from their counterpart found in other nations. 

  3. Japanese fluffy pancakes are such in texture because first of all their batter is prepared by folding in whipped egg whites and secondly they are cooked in ring molds.

  4. But what will you do in case you don’t have ring mold at home and you crave to relish this delectable dessert? We have got a solution for you! Read till the end to know the secret.

  5. INGREDIENTS: • 1.5 cups all-purpose flour • 2 teaspoons baking powder • 1 ¼ cups milk • .5 teaspoon pure vanilla extract (optional as per taste) • ¼ teaspoon cream of tartar • 3 tablespoon confectioners’ sugar

  6. 5 teaspoon salt (avoid it if butter is salted) • 4 tablespoons of unsalted butter (melted and cooled) • 1 large egg yolk • 3 large egg whites • For cooking use a non-sticky pan and for serving maple syrup is needed.

  7. IF YOU DON’T HAVE RING MOLD: If you have aluminum foil at home, you can still manage to cook your favorite Japanese fluffy pancake. Take a sheet of aluminum foil and wrap it around a scale evenly, so that it forms a long strap.

  8. Note that the ring is of 3 inch wide and 2.5 inch high. Next join both the heads with a stapler and give it a ring shape. Your mold is ready!! You are free to craft out as many mold you require.

  9. METHOD: In a big bowl mix sugar, salt, baking powder and flour by whisking them together. In another bowl mix melted butter, egg yolk, milk and vanilla by whisking them together.

  10. 3. In the third bowl beat the egg whites and the cream of tartar till stiff peaks are formed. If possible, use an electric mixer for two minutes at medium-high speed

  11. 4. Blend the mixture of milk along with the mixture of flour and combine nicely. Try to avoid lumps. Next add one-third of the beaten egg whites into the mixture of milk and flour. 

  12. Then gently keep adding all the beaten egg whites. While combining, care needs to be taken not to over mix the ingredients

  13. 5. Carefully grease the inside of the aluminum foil ring molds either with oil or with non-stick cooking spray.

  14. Make sure you don’t grease the aluminum foil ring molds in advance and only before placing them over the pan. Else oil will slip off the aluminum foil

  15. 6. Coat the non-sticky pan with the same oil or non-stick spray and let it heat on medium flame. Then slowly place the aluminum foil ring molds on the middle of the pan and fill them with half cup of the prepared batter. 

  16. Next cover the pan with the lid and don’t disturb until the batter rises till the top of the ring molds, along with a golden tint on the bottom. Gentle flip them so that the other side as well becomes golden

  17. 7. When done, transfer the fluffy Japanese pancakes into a plate and serve with maple syrup and other add ons.
