  4. For the pancake mixture: • 110 g/4oz plain flour • Pinch of salt • 2 large, fresh eggs • 200ml/7fl oz milk mixed with 75ml/3fl ozwater • 50g/2oz butter Ingredients (6 pancakes)

  5. To serve: • caster sugar • lemon juice • lemon wedges

Sift the flour and salt into a large mixing bowl. • Add the eggs and beat well until smooth and lump free. • Add the milk and water mixture and whisk. • Leave the batter to rest for 15 minutes. • Lightly grease a pan with a little melted butter and heat until very hot. • Add a ladle of batter to coat the base of the pan. • Cook until set and lightly golden. • Flip over. • Remove the pancake from the pan, place on a sheet of kitchen paper and keep warm. • To serve, sprinkle each pancake with lemon juice and caster sugar, fold in half, then in half again to form triangles, or else simply roll them up. preparation
