Course objectives: • 1. Identify the ways foods are produced, marketed, and consumed in Italy as compared to the U.S. • 2. Contrast social, cultural, and environmental influences on food acquisition, storage, and preparation in Italy with those in the U.S. • 3. Evaluate public policies and practices related to food, nutrition, and health in Italy as compared to the U.S.
Classroom presentations and experiences • Explore health benefits of the Mediterranean diet and lifestyle • Discuss farm to table sustainable food practices • Prepare and taste foods of the Mediterranean
Out of classroom experiences • Visit fresh food markets, pasta, cheese, wine, olive oil and balsamic vinegar producers and a school food service • Walk throughout Florence and in the Cinque Terrre
Expectations • Participation in all classes and excursions • Behavior: Representative of the University of Missouri and guest in Italy • Class presentations, group discussions and quizzes in Italy; reflection portfolio on return to US.
Travel • Excursions in Chianti area, Emilia Romagna region, Cinque Terre, Luca and Pisa. • Free days on January 1, 4, 5, 11, 12.

Application Submit the following application materials to Deb Garrett, Room 340H Bond Life Sciences Center: • Course proposal form- Approval to study abroad from your advisor • Application form • Deposit. A non-refundable $100 deposit payable to University of Missouri to hold a place in the program. Return deposit and forms to Room 340H Bond Life Sciences Center by October 18, 2013
