What is an antioxidant? Anti – Against Oxidant – Oxidation
Antioxidants Antioxidants are molecules in the body that work to preventoxidation in the body.
. Oxidation: A process in which one or more electrons is lost by a chemical entity to an oxidizing agent in redox reactions.

How Antioxidants work Stopping the Chain Reaction - The chain reaction that was initiated, [as explained in the previous slide], is stopped by Antioxidants because antioxidants provide the free radical with an electron so that it does not steal electrons from others (AntioxidantBuzz, 2010). 2. Prevention - Antioxidant comes as enzymes such as superoxide dismutase, and catalase actuallyprevent oxidation. They prevent the chain reaction from happening by getting rid of free radicals in the first place (AntioxidantBuzz, 2010).

Research: Antioxidants “In one recent study, the addition of a polyphenol-rich blueberry gel to the diet of oral cancer patients prevented recurrence of the cancer. Another experiment demonstrated that increased levels of selenium in the diets of a group of HIV-positive patients significantly delayed progression of the disease” (SolmazBarazesh, Penn State).

Risks to human health Over consumption of any antioxidants lead to side effects. Examples: Vitamin E:Over consumption causes: nausea, headaches… gastrointestinal bleeding, blurred vision Calcium: Stomach problems and kidney stones.
