2 oz. eq. Grains Meat/Meat Alternate In Place of Grains 1 oz. eq. Grain 1 oz. eq. M/MA • When offering a M/MA in place of grains in SBP • Must also offer at least 1 oz. eq. of grains daily • Must count the M/MA toward the weekly grains range and the weekly dietary specifications
Meat/Meat Alternate as an Extra • A M/MA as an extra item • Must also offer at least 1 oz. eq. of grains daily • The meat/meat alternate does not count toward the grains range • Meat/meat alternate must counted toward the weekly dietary specifications
Component versus Item -Definitions Food component - One of the 3 food groups • Fruit • Milk • Grains Food item: A specific food offered within the 3 food components
Component vs. Item - Offerings • Always offer all three components in at least the required amounts • For OVS, must offer at least 4 food items at breakfast • Students must select at least 3 items
Component vs. Item - Fruit Component • Fruit is a single component • A daily serving must be offered at breakfast • Serving equals ½ c. • At breakfast only, vegetables may be offered in place of fruit
Component vs. Item - Grain Component • Offer daily and weekly serving ranges of grains at breakfast • Flexibility on grain ranges has been extended • Phased in implementation of whole-grain rich (WGR) • 50% of grains offered must be (WGR) • May substitute meat/meat alternate for grains once daily grains minimum is met
OVS - Grains (part 1) • Menu planner determines how many foods must be selected in order to credit as a grains food item. • Must select 3 or 4 items

OVS - Grains (part 2) Grains-meat/meat alternate combination items • When counting the Meat/Meat alternate as grains, the combo may count as 1 or 2 food items • Example: breakfast pizza w/1 oz. eq. of grains and 1 oz. eq. of m/ma counting as grains = 2 food items • Must select 1 or 2 additional items for a reimbursable breakfast = 2 food items
OVS - Grains (part 2) Grains-meat/meat alternate combination items • SBP sponsors may offer M/MA as an additional food and not credit it toward any component • Example: breakfast pizza w/1 oz. eq. of grains and 1 oz. eq. of m/ma counting as grains = 1 food items • Must select 2 or 3 additional items for a reimbursable breakfast = 1food item
Determine Meal Choices • Determine rules, and group items as breakfasts • Develop signage for the choices • Train staff and POS cashier • Remember, Offer vs. serve is not required at breakfast
Pre-plating/Bundling • Remember – OVS is not required at breakfast • Pre-plating/bundling is allowed • Encouraged to offer choices to the extent possible
