There are appellations in Bordeaux where the bulk of the blend is Merlot-based, such as Pomerol and St. Emillion . As an unblended varietal wine it does well in California, as the warmer climate accentuates is natural sweet suppleness and this has a commercial appeal. The Merlots grown in warm climates lack structure, acid and character.It needs the company of other grapes to show off its potential, as hotter climates do bring out its spicier, plumier side. It produces light, grassy wines in northern Italy , and if blended does well in New Zealand and South Africa. Chile also seems to get it to stand rather well on its own. • In the red Bordeaux blend,think of the Merlot as the sugar in the recipe, the Cabernet Sauvignon as the flour, and the Cabernet France as the spices . Merlot gives softer, plumper and juicy, early maturing wines that are sweeter; a perfect complement to the tannic Cabernet Sauvignon and the spicy Cabernet France Merlot
Classic Grape varieties - Reds Syrah • Called Shiraz in Australia and South Africa, Syrah is the magic varietal behind the Rhone Valley’s famous Hermitage, Cote-Rotie, Corans, St-Joseph and Crozes Hermitage. • At home in the valley’s granite soils, it produces wines that are deep in colour and aroma. When young, they display floral and fruity (raspberry)notes . Once matured this evolves into notes of black pepper , leather, spices and game. • Syrah is very versatile grape and can be grown in almost any climate, although yields need to be kept down and over-ripeness must be avoided or the wine can become heavy, flabby and too tannic. • Outside France, in Australia and California, Syrah is used both as a single verity and in blends with good result. Special mention must be made to the Australian Shiraz like Grench which is one of the most outstand wines in the world.
