Food supplement and biotechnology of its release “Biopectin”
State educational institution of higher education “Moscow State University of Food Production”Department of «Technology of Fats and bioorganic synthesis» Author: Doctor of Biological Sciences, Corresponding Member of Russian Academy of Natural Sciences, professor Butova S.N.
Ecological aspect Bad ecology caused by: • Pollution with chemical and microbiological production; • Higher radiation background partically in all regions of the country; • Widespread adoption in medicine and veterinary medicines, particularly antibiotics. This leads to changes of ecological contact between humans and microorganisms.
Urgency of the problem All this shows the need for biological additives, which have: • Protection; • Dietary; • Therapeutic and preventive effects for all categories of the population.
Pectic Substances This macromolecular compounds represent a long polysaccharide chain. The major part of this chain was linked residues of D-galacturonic acid in the side links of which may include D-galactose, L-rhamnose,L-arabinose, D-xylose.
Microbiological aspects of the preparation "Biopektin" • Studies have shown an adverse effect on pathogenic microorganisms discharge festering wounds which manifests itself in 2 hours. • After 96 hours there observed of a significant decrease in their content (according to laboratory of Center of State Sanitary and Epidemiological Surveillance is situated in Western District of Moscow).
The effect of pectin on human’s health • Pectin is able to excrete heavy metals from the body by forming complexes (lead, mercury, zinc, cobalt, molybdenum, etc.) and long-lived (half-life of several tens of years) isotopes of cesium, strontium, yttrium, etc. • Pectin has the ability to collect and excrete the biogenic toxins, anabolics, xenobiotics, food metabolism and biologically harmful substances that can accumulate in the body: cholesterol, bile acids, urea, etc.
Reduction of nitrite by adding 1%-solution of various pectin
Biological properties of “Biopectin” • “Biopectin” obtained by microbiological waste from fruit and berry and vegetable raw materials using yeast pectolytic enzyme complex actions can be widely applied in: • Food Industry; • Medicine. • A distinctive feature of "pectin" as additives is low cost of its production and preservation of bio-, physical-chemical, bacteriological and sorption properties.
Marketing of pectin in the world • World production of pectin is currently about 30 thousand tons / year. On the world market has been a steady increase in the consumption of pectin in average 3-3,5% per year. • In a survey of professional trade companies and consumers more competitive recognized is citrus pectin. • The biggest producers of pectin in the world are the companies "Hercules Inc." (USA), "CP Kelco" (USA-Denmark), "Danisco" (Denmark), "Herbstreith und Fox КG" (Germany), "Kopenhagen pectin fabric" (Denmark), "Pectowin" (Poland), «Degussa» (France), "G.K.Han КO Stabilizirungstechnik GMBH (Germany). • The average import price of pectin was in 2005 9,1 $/kg in first quarter; in 2006 - $ 8.721/kg. Prices of distributors and sales organizations in the pectin are currently 11,6-15 $/kg with VAT.
Facts for the Russian Federation • Total consumption (imports in Russia) of pectin and substitutes (agar-agar, carrageenan, except gelatin) in 2005 amounted to 3503 tonnes (+33% compared to 2004). • Imports of agar-agar in Russia in 2005 declined by 70% compared to 2003, due to lack of raw materials for its production due to unsustainable extraction in previous years and the increasing demand on the world market. • The volume of Russian market of pectin at 2005-2006 can be estimate in 1200-1300 tonnes per a year. • According to experts estimate demand for pectin preparations in Russia is currently satisfied by 1-2%. Meanwhile for Russia as a whole (145 million) it requirements of more than 208 thousand tons per year (taking into account the consumption rates of pectin 2-4 g per person per day).
at the conclusion Production of next-generation products uses high technologies ensuring the formation of functional properties of food products that retain the biological activity of nutrients. This has a positive impact on: • Human’s health; • Increasing resistance; • Regulation of many physiological processes; • Opportunity to lead an active lifestyle.
