  2. The most vicious popular snack - "(Chinese) dough" (You-zha-gui) Chinese popular snacks are quite diversified in kind; and the story behind each of them is also fascinating. One of an easy-made wheat food is called "You-zha-gui" (Chinese dough), people from north China named it as "You-tiao"(Twisted cruller). But this fried wheat food is, in fact, pretty vicious in nature.

From "You-zha-kuai" to "You-zha-gui" During the fall of the Southern Dynasty, the court traitor Qin-kuai made use of "groundless" accusation to sentence the patriotic and loyal courtier Yue-fei to death, resulting in popular indignation. Consequently, in order to let off ones agitation, a hawker then used flours to knead the shape of Qin-kuai as well as his wife, frying "them" in the pan, shouting loudly and publicly "You-zha-kuai" (fried Kuai) all over the street, where Qin-kuai was coincidentally passing by. Fortunately, someone nearby came up a good idea in time of crisis, saying "You-zha-gui" instead, so that Qin-kuai's anger could then be pacified!

  4. Collocation of "You-zha-gui" "You-zha-gui" is almost a day-to-day menu during the breakfast time of most of the Chinese families. The Cantonese love to have it together with plain congee, while those from the east and north prefer to take it as a filling of baked wheat cakes, accompanying with soya milk. The followings are some other delicious dishes collocating with "You-zha-gui":

  5. 1. "You-zha-gui" is parceled by glutinous rice, and by adding some spiced mustard roots and fried pork flakes, a "Zi-fan" (Sticky rice) is done; 2. Egg sauce mix with fish intestines, then steam the plate after putting some portions of "You-zha-gui" on top of the fish intestines, that is a mouth-watering Cantonese dish "Steamed egg and fish intestines"; 3. Another nice Cantonese dish is called "Gui-ma-xiao-chao", it's ingredients usually include water chestnut (Ma-ti) and "You-zha-gui", and this is how the name of the dish is generated; fry the above together with certain amount of meat, one can taste it with a very refreshing texture.

Ingredients 1 cup 1% low fat milk, 2 tablespoon all-purpose flour, 28 ounce canned plum tomatoes, drained and chopped 1 - carrot, small, finely chopped 1/8 teaspoon crushed red pepper, 1/2 teaspoon dried oregano leaves, 1/2 cup dry white wine, 1/3 cup fresh parsley, chopped 1/4 teaspoon freshly ground black pepper, or to taste 3 - garlic clove, minced 1/2 cup grated Parmesan cheese, 1/2 cup jarred roasted red bell peppers, rinsed and chopped 1 cup low-sodium chicken broth, 2 teaspoon olive oil, 1 - onion, finely chopped 1 pound pasta, such as tagliatelle or fettuccine 1/4 teaspoon salt, or to taste 4 ounce turkey sausage, hot or sweet, casings removed
