  4. Garlic Field Observation Stem and Leave System: Stem and leave growth occurs in early spring after emerging from winter dominancy. The garlic stem has not yet produced a scape (flower stem). The scape will emerge at the top of the stem when the bulbs begin to mature. Immature Bulb: Bulb growth and clove development occur in late spring and early summer after leaf die-back (turn brown) begins. Harvest occurs in July after bulbs are mature. Root System: Root growth occurs in fall soon after planting and is well established prior to the winter dominancy. Sample: Pictures taken May 20, 2010
