Summary Today a new type of water, “E-water” is the subject of much attention. To manage the sanitation of the food industry, E-water production system ‘ROX’ was developed by HOSHIZAKI. E-water is generated from ‘ROX’, and you can prevent food poisoning by using E-water for food washing and environmental disinfection. Approx. 80% of food poisoning is attributable to bacteria cross-contamination. It is necessary to disinfect utensils & hands during cooking to prevent food poisoning. However the chlorine sterilization often used as disinfectant can’t be used during cooking because of the strong residue. However, E-water can be used easily during cooking, as it leaves no residue behind. We hope very much E-water spreads in Europe, because unlike a lot of chemicals, E-water is safe to human body and environment. 1
What is ROX? ROX is the name of E-water production system. R: Reduction - Alkaline water OX: Oxidation - Acidic water ROX generates Alkaline water and Acidic water from only tap water and salt. Both E-water can be used in food sanitation. 2
Generation principle At the anode, the chlorine gas (Cl2) is generated from the chlorine ion (Cl-). The hypochlorous acid (HClO) are generated as the chlorine gas (Cl2) reacts with water (H2O). Water (H2O) decomposes and becomes oxygen (O2) and a hydrogen ion (H+). As a result, pH of the water of the anode becomes 3.0 or less. And the available chlorine becomes 20-60mg. At the cathode, water (H2O) decomposes and becomes hydrogen (H2) and hydroxyl ion (OH-). As the pH of acidic E-water is around 3.0, it consists 85% hypochlorous acid (HClO) and 15% chlorine gas (Cl2). In contrast, sodium hypochlorite (ClO-, hypochlorite ion) widely used in the market has a pH of around 10.0. HClO in acidic E-water sterilize approx 80 times faster than sodium hypochlorite solution of the same concentration. The existence form of chlorine 4

Comparison with other disinfectants Sodium hypochlorite ‘bleach’ ・It can’t be used during cooking because of the strong residue. 〈The smell and slimy feeling remains.〉 ・Undiluted solution almost doesn’t have disinfection power. 〈It takes time to dilute.〉 ・The processing time is long. ・When it touches clothes, it makes decolorization.
