UNECE Standard DDP-07of Prunes • Minimum requirements • Sound, fruit being affected by decay or damaged in such a way as to be unfit for consumption being excluded; • Clean and practically free from obvious foreign matter; • Free from living insects and mites, whatever their stage of development; • Free from visible damage by insects, mites or other parasites; • Free of foreign smell and/or taste.   5. Moisture content Order of 28 August 1972 Fresh prunes harvested at maturity are dried (cooked/dried at 76°C max.) to obtain: A 21% maximum moisture content, which preserves them "naturally". Then rehydrated and packaged on an as-needed basis Marie-Isabelle TRIVES CREMIEUX DGCCRF - France

Moisture content Order of 28 August 1972 concerning the prune trade Fresh prunes harvested at maturity are dried (cooked/dried at 76°C max.) to obtain: • Several hundred tons of prunes are dried at maximum moisture content of 34/35%, creating HALF-COOKED PRUNES. • And pasteurisation after bagging, • or put into cold storage (-18°C) and packaged at a later date.   9. UNECE Standard - Classification Whole prunes are classified in one class, called • "PRUNES" - "Class I" - Good quality, characteristic of the variety. Slight superficial defects and colour defects, provided that these do not affect - the general appearance of the produce or thequality, - keeping quality or its presentation in the package.   18. Preparations Order of 28 August 1972 concerning the prune trade Article 7 (continued): preparations (…) contains the word "prune". […] the denomination must be immediately followed by the indication "extra-moist prunes at… % moisture content."
