STEPS STEPS • Take a fresh, good-quality cantaloupe and cut in half.
• Remove the seeds. Take a saucepan and scoop the pulp into it.
• Cook the pulp over medium heat until it comes to a gentle (rolling) boil.
• Add this mixture to the mashed cantaloupe and stir it until it gets thick.
• Add water and a little bit of the cantaloupe mixture to the yolks to heat them.
• Add the egg yolk mixture to the heated pulp and stir it until it gets thick and creamy.
• Add butter and flavoring to the mix and pour it into baked pie crust.
• Beat cream of tartar and egg whites together in a separate bowl until the mixture becomes frothy.
• As soon as thick peaks form, stop beating and top the pie with the egg white mixture.
• Bake the pie at 205 degrees C until the top turns golden brown.
Tips • First taste the Cantaloupe before making a pie. Sometimes cantaloupe is not fresh. • Add Sugar as per your taste.
