What is diabetes? Diabetes describes a group of metabolic diseases in which a person has high blood sugar, either because insulin production is scarce, or because the body's cells do not respond properly to insulin, or both. Diabetes affects all kinds of people, all over the world.
Type 1 diabetes • This type of diabetes usually develops in young people. The insulin-producing cells in the body break down, and the body produces literally no insulin. The stomach changes food into glucose Glucose then enters the bloodstream The pancreas makes little or no insulin Little or no insulin enters the bloodstream Glucose builds up and just sits in the bloodstream un used. • The warning symptoms of type 1 diabetes include: Nausea and vomiting Extreme thirst with frequent urination Extreme hunger with rapid weight loss Tiredness and irritability • The treatment of type 1 diabetes include: Insulin injections Special diet Exercise
Type 2 diabetes • This type of diabetes usually develops in adults over the age of 40 years who are overweight. It is the most common type of diabetes. Insulin is produced in the body, but it may be decreased in amount or just not effective. Glucose enters the bloodstream and insulin enters the bloodstream With insulin resistance, glucose cant enter cells efficiently, so too much of it circles in the bloodstream The cell doesn`t respond to insulin and so the cell cant open for glucose to enter and be used as fuel • The warning symtoms of type 2 diabetes include: Thirst with frequent urination Blurred vision or a change in vision Numbness or tingling of the hands or feet Slow healing of wounds Tiredness, weightlossand irritability • The treatment of type 1 diabetes include: Special diet Exercise Sometimes, tablets to stimulate the production of insulin
Gestational Diabetes • This type of diabetes affects women during pregnancy. Some women have very high levels of glucose in their blood, and their bodies are incapable of making enough insulin to transport all of the glucose into their cells, resulting in progressively increasing levels of glucose. • The treatment of gestational diabetes include: Healthy diet Exercise Monitoring your blood sugar Closely monitoring your baby
Dietary guidelines • Lifestyle changes of diet and exercise are very important for people who have diabetes. • The American Diabetes Association recommends that people at high risk for type 2 diabetes eat high-fibre and whole-grain foods. High intake of fibre, especially from whole grain cereals and breads, can help reduce type 2 diabetes risk.
A recipe for a diabetic • Southern French-Style Herb-Roasted Turkey • Number of Servings: 10 (1/4 lb turkey meat) • Ingredients1/4 cup Extra-Virgin Olive Oil, divided1 (10–12 lb) turkey Salt, to taste Freshly ground pepper, to taste1 Tbsp Herbes de Provence1 tsp Poultry Seasoning1 Whole Head Garlic, top chopped off2 Lemons, halved1 Sprig Fresh Rosemary1 Sprig Fresh Thyme1 Sprig Fresh Sage • Preparation1. Preheat oven to 425°F. Use 1 Tbsp olive oil to grease the bottom of a large roasting pan. Wash and dry the turkey thoroughly. Season with salt and pepper on the inside and out. Place turkey breast side up in the pan. Brush the turkey with the remaining olive oil. Sprinkle Herbes de Provence and poultry seasoning on turkey, and rub into skin with your hands. Place whole garlic head, 1 lemon half, rosemary, thyme, and sage inside the cavity. Squeeze lemon juice from remaining lemon half over the top of the turkey. Place turkey in the oven, add a cup of water to the bottom of the pan, and roast for 1 hour, uncovered. Baste turkey after the first hour of cooking. If turkey looks very brown, cover it with foil. Continue to bake for another 2–2 1/2 hours or until the internal temperature of the thickest part of the turkey breast meat reads 180°F on a meat thermometer. Remove from the oven, and place on a carving board. Let rest for 10 minutes before carving. Remove skin while carving.2. Strain the liquid from the bottom of the pan into another saucepan. Juice the remaining 2 lemon halves, add to the saucepan, and stir. Bring to a boil over high heat, and cook for 10 minutes or until sauce has reduced. Taste, and adjust seasoning if necessary. Serve sauce in a gravy boat next to turkey.
