las enchiladas …tortillas soaked in sauce, stuffed with beef, cheese, beans or other fillings – rolled, placed in a baking dished, topped with more sauce and cheese, then baked.
los frijoles refritos …pinto, black or red beans soaked overnight, then cooked and mashed. They are then fried in pork fat or bacon grease and sometimes topped with onions, cheese or sauce.
el arroz mexicano …Mexican rice in a restaurant is toasted before adding liquid, tomato sauce or bullion and sometimes onions. It has a salty taste and a fluffy texture.
el guacamole …condiment made from mashed avocadoes with lemon, onion and other seasonings.
mole …a complicated Mexican condiment made from Mexican chocolate, various chili peppers, sesame seeds, cinnamon and other spices. Usually served over chicken or enchiladas.

Lightly fry anchos, bread, plantains • Place in a bowl and cover with cooking liquid from chicken. Lightly break up ingredients and let soak while preparing other items. • Toast sesame seeds in a frying pan for a minute. Add remaining ingredients (including chocolate) and fry to soften. • Put all ingredients in a blender and blend smooth adding chicken broth as needed. You will probably have to do this in a couple batches. • Simmer the blended mole in a large pot with remaining chicken broth for ten minutes. Add salt and sugar to taste. • Add chicken pieces and simmer an additional 10 minutes. las tostadas …tortilla fried in oil until crispy – can be topped with a variety of toppings.
