The process involves the complete transformation  of the beans that merely undergo chemical changes when its internal temperature rises.  Due to heat sugar in beans converts it into brown color. Thinking that coffee is found in  brown or even green color, is totally wrong; coffee beans are just the seeds of tiny red  fruits. The coffee plant grows as flowers then ripe as fruits called cherries. To develop an aroma involves some of the roasting stages involving the  temperature of (300 F - 500F). These stages can be named Light, Medium, Medium Dark,  and Dark.  Stage 1:​Firstly the heat builds, and it changes beans from green to a slightly  yellow color. Now the beans emit a grassy aroma. Soon after that, the water  inside the beans evaporates as steam.  ●

  2. Stage 2:​This is the stage where the real roasting begins. It depends on the  upturning of temperature and airflow, the beans start producing cracks after 6 to  8 minutes. This cracking sound is the same as the sound of popcorn popping.  ● This procedure is named ‘Light Roast’ in that the coffee comes to mild flavor with bright  acidity. Anyone can buy this freshly roasted coffee in the US.  Stage 3:​ Further, as the sugar becomes caramelized the beans themselves get  swelled in size and become aromatic. The beans here get medium-brown in color  with a flavor and acidity. It gets roasted and bitterness collapses.  Stage 4:​ The bean's flavor intensifies. It becomes medium-dark. You can buy  fresh-roasted coffee beans in the US.  ● ●     Stage 5:​ At this vary stage the coffee beans crack for a second time and the  beans turn to dark brown color and get fully roasted.  ● MYTHS ABOUT ROASTING:  People think that the color of the roasted beans determines the concentration of  caffeine in it. But it's not true at all. The darker is the color of beans, the higher is the  level of caffeine present in it.  Some of them create the myths that the Oil that is extracted during the process of  roasting is not oil. These are nothing else than the moisture and the carbohydrates that  are released during caramelization that results in the color and aroma of beans.
