Changing Food Systems • Food systems worldwide have changed rapidly and continue to change • Food systems changes are intertwined with changing: • Demographics • Consumer demand & preferences • Technology development • Environmental accountability • Global markets • Understanding of food and health relationships

Changing Higher Education • Higher education is also changing • Federal and state support is greatly reduced • Extension has a new portfolio • Traditional mission of education, research, and extension/public service remains • Insert some “renewing the covenant” stuff here? • Opportunity to renew the university’s mission- higher education can influence future food systems. But how?

Higher Education Values • Educating traditional and non-traditional learners (about practical approaches and theoretical concepts) • Developing lifelong learners • Addressing unique and complex issues of urban and rural communities • Fully engaging groups that seek knowledge and service How can we leverage these values for a future food system?
