Cut each head with plenty of stalk attached and upend it into a paper bag (never use a plastic one, because it would foster humidity and therefore rot). 3. Hang each bag somewhere cool and dry for about two weeks. 4. Then use fennel pollen or seed as needed. Herbal Wreath 1. Wire on small bunches (here, of rosemary) at a time, securing firmly them to the twisted hazel base. 2. Check that the bunches are evenly spaced around the base. 3. Fruits such as chillies can add colour to the wreath. 4. A wreath is a decorative way to dry and store bay leaves in the kitchen.
