  2. Chlorophyllin is a group of closely related water-soluble sodium copper salt, which are semi-synthetic products of chlorophyll. Plants such as nettle, spinach and typical grass are some of the raw materials used in the extraction of chlorophyllin. • The extracts from the plants are stabilized, causing displacement of magnesium from molecule core, and substituting it with copper. This forms a water-soluble colorant known as sodium copper chlorophyllin. Copper chlorophyllin is a permitted food colorant in European Union countries. • Benefits of chlorophyllin • Copper chlorophyllin is light, heat, and PH stable when compared to magnesium chlorophyll, which is found naturally. • The product comes in different forms including powder, liquid, and oil-soluble versions.

  3. Uses of Chlorophyllin • The product is mainly used in ice creams, dry beverages mixes, icing, and confectionery. It is also capable of dissolving in solvents such as water. • It is a food a colorant that is green extracted from chlorophyll.
