Introduction • Examine the feasibility of adding fresh fruits and vegetables into the school lunch program • Research the need for healthier school lunches, focusing on three factors: • School lunches are contributing to obese children • School lunches are lacking in nutrition • Anchorage School District (ASD) continues to receive low scores for their lunch program
Introduction • Determine positive and negative outcomes from improving the school lunch program • Healthy children • Improve scores for the lunch program at ASD • Provide healthier lunches • Identify if the school district can afford to improve their lunch menu • Is there funding available to make improvements? • Does the school district have the staff and resources to make adjustments to their lunch program?
Criteria for Feasibility • Can ASD provide a salad bar for school lunches? • Is the public in favor of more fruits and vegetables for school lunches? • Can ASD help students make healthier food choices at school? • Will the public be willing to pay more for healthier lunches?
Methods • Conducted secondary research through the UAA Consortium Library’s online database • Developed and distributed 15 questionnaires to UAA students • Analyzed and compiled the data from the completed questionnaires into graphs • Searched on-line sources and various text books on school lunches • Conducted internet research on the costs associated with salad bars in school
Secondary Research Results • Let’s Move Salad Bars to School, is a program that provides free salad bars to schools • This program is grant and donation funded • Any K-12 school district participating in the National School Lunch Program is eligible to apply • This program can help increase the fruits and vegetables provided in schools • Children will increase their consumption of fruits and vegetables when given a variety of choices in a salad bar

Primary Research Results • 53% of the respondents, agree that fruits and vegetables need to be served on a daily basis • 49% of the respondents, agree the best way ASD can help students make healthier food choices is to add a salad bar at lunch • 7 out of the 15 respondents, would pay more for school lunches for an increase of fresh fruit daily
Conclusions The research completed concludes that even though there is a substantial amount of support to improve the school lunches, there is a need for further study on the related costs to improve this program.
Recommendations • More research is needed • More public outreach is recommended to determine this study • Additional research on ASD’s student nutrition budget and the costs associated with buying food and supplies
