STEP ONE: In a saucepan bring 2 cups peeled and chopped pears, 1¼ cups water, ¼ cup sugar, and ¼ cup orange juice to boil. Reduce heat; simmer, covered, for 20 minutes. Cool slightly. Transfer to a blender; puree until smooth. Strain mixture through a fine-mesh sieve; discard solids. Makes 21/3 cups pear puree.
