  1. Enjoy the Taste of Mouth-Watering Blue Berry Cake Blueberries are considered one of the superfoods and have numerous health benefits. Again, it is delectable to taste and liked by many. Blueberries are rich in antioxidants and prevent the sign of aging. Blueberries resist damage to the DNA and minimize the risk of cancer. Blueberries fight the risk of heart-related diseases and urinary tract infections. Due to the delectable refreshing taste of blueberries combined with health benefits, it is increasingly used in making desserts. So, if you are looking forward to making blueberry desserts, try this recipe. HOW TO MAKE BLUEBERRY CAKE? Blueberry cake is made the best when the berries are fresh, but still, you can use frozen ones as well. The problem with blueberries in baked goods is it often sinks to the bottom of anything you bake.

  2. To keep the berries suspended, we need to take advantage of gravity. It can be done by sprinkling the blueberries on top of the batter. Due to this, only half of the berries will submerge in the batter, and the rest half will float. BLUEBERRY CAKE RECIPE: 1 cup (130 g) all-purpose flour plus 1 teaspoon of flour (plus more for prepping cake pan) 1 teaspoon baking powder 1/2 teaspoon salt (omit if using salted butter) 1/8 teaspoon cinnamon 1/2 cup (4 oz, 113 g, 1 stick) unsalted butter, softened 3/4 cup (160 g) sugar 1/4 teaspoon vanilla extract 2 large eggs 1 teaspoon lemon zest (optional) 2 cups (325 g) blueberries, rinsed and drained (if using frozen blueberries, thaw and drain first) 1 teaspoon lemon juice Powdered sugar for dusting METHOD: Preheat the oven to 350 degrees. Take an 8-9 inch round cake pan, add a layer of butter and dust with flour and place a parchment paper at the bottom. Vigorously beat together one cup of flour with baking powder, salt, cinnamon powder and keep it aside. Use a mixture to beat the butter for two minutes and then add sugar and blend till it is light and fluffy. Add vanilla essence to it and stir well. After that, add two eggs to the blender one at a time and add a zest of lemon. Finally, reduce the speed of the blender and flour mixture to it and beat it until you get a fine mixture. Empty the batter into the prepared springform pan. Toss berries dipped in lemon juice and coated with flour on the batter: Mix the berries in lemon juice and dust flour on it and lay it over the batter. Place the pan on the middle rack of the oven for 45 to 55 minutes at a temperature of 350 degrees Fahrenheit until the tester inserted in the center of the cake comes out clean.
