How to make Spanakopita Whitney Fitzgerald
Ingredients: Collect the night before • 3, 10 ounces packages of frozen chopped spinach thawed and drained • 1 bunch parsley chopped fine • 1 bunch green onion tops • 1 large green pepper • Salt • Lemon juice or a lemon • 10 eggs • 1 pound cottage cheese • ½ cup olive oil • ¼ tsp. ground pepper • 1 tsp. baking powder • 1 package of filo dough • 1 pound butter • Pan 12 x 8 • Paintbrush unused • Sesame seeds • 1 ½ cup feta cheese
Night before baking • Thaw out and drain frozen spinach • Place filo dough in fridge to thaw for 24 hours (leave in package)
Step 1 mix Mix: • thawed spinach • Parsley finely chopped • Green onion tops finely chopped • Green peppers ( only insides including seeds also chopped) • A little salt Let stand a few minutes then add a squeeze of lemon juice
Step 2 add to mixture Add to previous mixture: • Eggs • Cottage cheese • Olive oil • Ground pepper • Baking soda • Feta Make sure mixture is mixed well!
Set mixture to the side ( best in the fridge if you have room)
Step 3 Butter pan • Melt butter • With your paint brush spread butter all over the pan evenly including the sides
Step 4 filo • Lay one sheet down in the pan and butter it including sides • Lay second sheet down and repeat • Do this process till you have laid down 5 sheet of filo
Step 5 add • Now take your mixture out of the fridge • Spread a little bit of the mixture in your pan evenly • Then Place four layers of filo evenly buttering each individual layer in pan • After the fourth layer place more of the mixture in the pan and repeat this process
Step 6 • Butter top sheet of filo well and sprinkle sesame seeds on it • Place in fridge and preheat oven to 350 degrees • Before baking cut into desired squares • Bake for one hour
Step 7 Finishing up • After baking cut again • Eat and enjoy
