  2. Evidence • The tests didn’t show red until saliva was added. • When added to the mixture a positive sugar test was produced • Polysaccharide tested negative for sugar • Saliva tested negative for sugar • A mixture of polysaccharide and sugar tested positive for sugar.

  3. Reasoning Enzymes changes starch to sugar. Since neither polysaccharide nor saliva had sugar in it, yet the mixture of the two tested positive for sugar, it is proposed that the enzyme amylase, in the saliva, broke down the polysaccharide into the monomer glucose.
