LAY OUT AND DESIGN Whether you are starting scratch or remodeling, you’ll want to think through your lay out carefully with your basic customers, service, atmosphere in mind. The basic element of layout are the space available, the activities going on in that space, the number of seats, the size of the bar ( large enough to hold equipment for the drink types you offer), and the relationship of the bar area to other aspects of a larges facility such as a restaurant, hotel, or club.
THE BASIC ELEMENT OF LAYOUT • Available Space : available space as an element of layout includes not only square footage but also the shape of the area, the position of entry and exit, and the sharing of space with other activities such as dining, dancing or live entertainment. • Activities and traffic patterns consider the movement of people in the room. In addition to bar service perhaps you will have dining or dancing or live entertainment or the traffic of guest in a hotel lobby. You also have the movement of the bar patrons themselves entry and exit. combings and going to restrooms, telephone coatroom, or just milling around among themselves.
FURNITURE • All furniture should be chosen and laid out in relation to the total bar concept. Bar stools and lounge chairs should look inviting and feel comfortable. Chair designers claim they can control the rate of customer turnover simply by the degree of comfort of the seat cushion. Lounge chair should arrange well around cocktail tables. The tables themselves can be small if they are only for drinks, and in a busy bar you can crowd them somewhat. The sizes and shapes of tables and chairs are important elements in lay out.
INFLUENCE OF UTILITIES, CODE AND LICENSING RESTRICTIONS Plumbing is important in positioning the bar. Supply pipes and drains should not travel long distance because they are expensive to install and because there is more to go wrong. If you have a kitchen , it is most efficient to coordinate plumbing for both.
