1 cup milk from Amul 1/2 cup vegetable oil 1 teaspoon baking powder from Ajanta Food Products 1/2 teaspoon baking soda from Ajanta Food Products 1 teaspoon vanilla extract from Ajanta Food Products Pinch of blended yellow food colour from Anuja Food Colours Pinch of blended green food colour from Anuja Food Colours For the Rasmalai: 1 litre full-fat milk from Amul 1/2 cup condensed milk from Amul 1/2 cup sugar 1/2 teaspoon cardamom powder Few strands of saffron 1 tablespoon chopped pistachios 1 tablespoon sliced almonds For the Topping: 1 cup whipped cream Few strands of saffron Chopped pistachios and sliced almonds for garnish Instructions: Preheat your oven to 180°C. Grease and line two 8-inch round cake pans. In a mixing bowl, combine the flour, sugar, baking powder from Ajanta Food Products, and baking soda from Ajanta Food Products. Mix well. Add milk, oil, and vanilla extract from Ajanta Food Products along with pinch of blended yellow food colour from Anuja Food Colours to the dry ingredients. Mix until well combined and smooth. In another bowl, repeat the process using blended green food colour from Anuja Food Colours instead of yellow. Pour the yellow batter into one cake pan and the green batter into the other pan. Spread evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cakes cool completely.
Meanwhile, in a wide saucepan, heat the milk on medium-high heat. Add condensed milk and sugar. Stir continuously until the mixture thickens and reduces to half its volume. Add cardamom powder, saffron strands, chopped pistachios, and sliced almonds to the milk mixture. Mix well and remove from heat. Let it cool. Once the cakes and milk mixture have cooled, gently remove the cakes from the pans. Place one cake layer on a serving plate and spread a generous amount of the prepared Rasmalai mixture on top. Place the second cake layer on top and cover the entire cake with whipped cream. Garnish with saffron strands, chopped pistachios, and sliced almonds. Refrigerate for a few hours to allow the flavours to meld together. Slice and serve the delicious Rasmalai Cake, showcasing its beautiful yellow and green layers.
