CHICKEN AVOCADO CAPRESE SALAD Enjoy a delightful twist on a classic with our Chicken Avocado Caprese Salad. Fresh, flavorful, and perfect for a healthy meal
INGREDIENTS • 2 ripe avocados, diced • 1 cup cherry tomatoes, halved • 1/2 red onion, thinly sliced • 1/4 cup fresh cilantro or parsley, chopped • Juice of 1 lime • 2 tablespoons extra virgin olive oil • Salt and pepper to taste
INGREDIENTS FOR CAPRESE CHICKEN: • 4 boneless, skinless chicken breasts • 4 slices fresh mozzarella cheese • 4 large basil leaves • 2 tablespoons balsamic glaze • Salt and pepper to taste
INSTRUCTION: • Preheat your grill or grillpan to medium-high heat. • In a bowl, combine the diced avocados, cherry tomatoes, red onion, cilantro or parsley, lime juice, and olive oil for the avocado salad. Season with salt and pepper, and toss gently to combine. Set aside.
FOOD IS IMPORTANT • Season the chicken breasts with salt and pepper on both sides. • Grill the chicken breasts for about 6-8 minutes per side or until they reach an internal temperature of 165°F (75°C). • During the last few minutes of grilling, place a slice of mozzarella cheese and a basil leaf on each chicken breast and close the lid of the grill to allow the cheese to melt. • Let the chicken rest for a few minutes before slicing. • Garnish with extra fresh basil leaves if desired and Enjoy.
