Natamycin 50% lactose is an effective natural food preservative for preventing yeast and mold growth.   2. Natamycin 50% lactose protects foods through a unique mechanism that targets ergosterol in the cell wall. Ergosterol is a building block of yeasts and molds, which is responsible for intracellular nutrient transport, and therefore vital for their survival. As ergosterol is not present in the outer membranes of bacteria, these remain unaffected. Natamycin 50% lactose is also used to protect crops from spoiling. For example in the US, the outside of oranges can be treated to avoid fungal growth and thereby providing a natural alternative to protect fruits.
