  8. Le sarde di lago o agoni Si pescano in tutti i laghi del Nord: Como, Iseo, Garda , Lago Maggiore e si chiamano AGONI, ma sono conosciuti, anche,come sarde di lago. Durante la stagione di pesca, da giugno a settembre, gli agoni formano grossi banchi che salgono verso la superficie.

Con questo termine si indica il metodo usato per conservare il pesce per i mesi più freddi. Appena tolto dalle reti, il pesce viene pulito e salato in giusta quantità. Il giorno successivo gli agoni sono pronti per la sfilzatura: vengono appesi, dalla testa, ad asciugare al sole. Dopo alcuni giorni, gli agoni aromatizzati con foglie di lauro, vengono invasati in un contenitore, la tolla o la missolta, e posti sotto la pressa, dove resteranno per i dodici mesi successivi.
