Tagliatelle with meat sauce (for 4 people) Ingredients (for the pasta) 400 gr flour 4 eggs
Method Mix the eggs e flour together on a pastry board and form a large smooth ball leave in a plastic freezer bag for half an hour. Roll the pastry using a rolling pin until the pastry is 1\2 cm thin leave the pastry to dry on a cotton tea towel then place back on the pastry board. Roll the pastry into a long roll then cut into 1\2 cm wide strips. Fill a deep pan with water and bring to the boil adding a pinch of salt. Put the tagliatelle in the hot water e boil for 5 minutes,
Meat Ragù. (for 4 people) Ingredients 1 carrot 1\2 onion 1celery stalk 1 1\2 kg beef mincemeat 1 1\2 kg pork mincemeat 1 tablespoon of concentrated tomato puree 1 bottle of tomato pulp Salt Olive oil 1 glass of red wine
Method Cut the carrot celery and onion into small pieces e fry in a deep pan in olive oil. Add the meat, the concentrated tomato and salt. Brown for about 5 minutes stirring continuously then add 1 glass of red wine and the tomato pulp. Continue cooking on a low heat for about 1 1\2 hours until the ragù is a brownish color and dense.
