#2 Fire-Roasted Superbowl Salsa 1. Using BBQ or broiler in oven, char on high heat the following items (there should be black on the outside but is not super mushy inside): -4 tomatoes -1 medium white onion (peel off and sliced in half) -1 jalapeño 2. In pan on stove or in toaster oven, roast 5 cloves of garlic until golden on the outside 3. Clean and cut ends off of 1 bunch of cilantro 4. In a blender or food processor combine (use pulse function): tomatoes, onions, jalapeño, garlic and ½ bunch cilantro 1 teaspoon salt Taste and add more salt or cilantro as desired **To make salsa less spicy, only use ½ of the jalapeño Perfect Nacho assembly: next slide!
How to assemble perfect nachos 1. On a microwave-safe plate layer -single layer of chips -shredded cheddar cheese -black or refried beans (warmed) -meat of your choice -warmed(optional) -fire-roasted salsa or magic green sauce (recipe to come in future week) -**2nd layer of shredded jack cheese 2. Repeat to make 3 layers total of chips and toppings 3. Microwave on high until cheese is melted-about 1-3 minutes 4. Top with chopped cilantro, chopped white onion and chopped tomatoes 5. Add dollop of sour cream and guacamole to the top **If making a large batch, use a baking pan and cook at 350 degrees in oven until cheese melts
