Special Events Including Super Bowls • Special events and NSSE’s • FDA resources, provided through request (RFA’s) from USSS state/local • Retail Food Specialist role, training, standardization, SME’s, collaboration, other resources • FDA issued assignments demonstrate cooperative efforts: inspections, sampling, record collection & trace back activities.

  3. FDA NIMS & IMT’s • HSPD 5 All federal agencies to be NIMS compliant • ICS the established, standardized organizational structure and terminology utilized for the management of all incidents • 2009 FDA NIMS implementation work group, training based on established standards and FDA EOP

Roles & Responsibilities of NJ Department of Health • Primary Regulatory Authority of the MetLife Sports Complex (State Property) • MetLife Stadium, Izod Center, Racetrack & New Racetrack and surrounding areas • Provide technical assistance, training & support for Local Health Departments (LHDs) • 100 LHDs in NJ/ ~20 LHDs in Super Bowl Zone • Coordinate efforts of State, Federal & LHDs

Challenges of Super Bowl 48 • Two-State Super Bowl NJ NY Co-host • New Jersey (Game Day Activities) & • New York City Super Bowl Week Festivities • Super Bowl Blvd, Bud Light Cruise Ship, etc. • NFL Control • Limited NJ control • Vendor cross over • The Unknown • Outdated Facilities (Meadowlands Racetrack)

Pre-Super Bowl: Food Defense Initiative • NJDOH inspectors conducted food vulnerability assessments at 9/11/11 and 12/11 games: - 60+ foodservice operations visited - most recommendations had been implemented • DNC’s food defense directive “to demonstrate a higher level of safety with our food supply/flow” - FIRST training required for all employees - stricter receiving/storage protocols - chain of custody for food V

PRE-SUPER BOWL: LHD OUTREACH • Newark Health Department: - met with Newark HD and foodservice management staff at Prudential Center on 1/7/14 -food defense discussion/materials - walk-through facility assessment and recommendations • Bergen County meetings: - help prepare local health for potential impact of influx of people to hotels, restaurants, mobile foods, etc. - meetings on 11/26/13 1/15/14 with FDA, USDA, NJDOH and local HD - trainings by NJDOH, FDA CER & FDA NJ DO V

Super Bowl XLVIII Joint Food Defense Initiatives • Food defense presentations part of overall discussions with locals in May and August 2013 • Food defense vulnerability assessments conducted 12/13-15/14 by NJ FDA, NJ DOH at transit sites, Turnpike HMS and review of DNC food defense plan at Met-Life Stadium • Review of DNC new food defense plan at MetLife Stadium Newark Penn Station Waiting Area

  26. Pre-Super Bowl: • Inspectional activities included monitoring of receiving and preparation temperatures of multiple types of food products to be re-heated, stored, cooked, prepared and served during tailgating parties on 2/2/14 L
