Learner-centered nutrition education improves folate intake and food-related behaviors in non-pregnant, low-income women of childbearing age Study Design • Study participants were randomized by recruitment site to attend either a learner-centered, folate-focused nutrition lesson or a control lesson about resource management. • In addition to a demographic questionnaire, participants completed 1) the Block Dietary Folate Equivalents Screener and 2) a Food Behavior Checklist, first at baseline and then one month after attending the assigned lesson. Learner-centered nutrition education improves folate intake and food-related behaviors in non-pregnant, low-income women of childbearing age Results • Participants who attended the folate lesson had significantly greater improvements in natural food folate intake, total folate intake from all sources, and use of the Nutrition Facts label, compared to participants attending a control lesson about resource management (p<0.05). • The impact of the folate-focused lesson varied by ethnicity and by participation in the Special Supplemental Nutrition Program for Women, Infants, and Children (WIC), thus highlighting the importance of targeted nutrition education interventions.
