Reasons for Menu • Length of stay is usually short so we have a 6 day menu • We do not serve many children so food choices are geared towards adults • We wanted to make sure that we offer familiar food, instead of gourmet choices • We want to please the masses with the foods we are giving • Tried to make the menu user friendly, clear, easy to indicate what they would like.
Menu Circulation • .
Menu Circulation • Breakfast: choice of either the main entrée or hot/cold cereal. • Lunch: soup, sandwich, and salad option- choose two of the three. • Dinner: main entrée, a pasta option, and a green salad. • Snacks will be delivered on a cart so that the patient chooses in that moment. • The menu will be picked up by the am diet tech and delivered to the kitchen staff by 6:00am. • At 8:00pm, a diet tech will walk around with a cart of three snack options. The patient can choose two of the three options and also will receive the menu for the following day • Patients check the boxes next to their selections for breakfast, lunch, and dinner.
Day 1 Nutrition Question of the Day: What nutrient in carrots helps improve vision? • Fiber • Vitamin C • Vitamin A • Anti-oxidants Ask your R.D. for the answer and to learn more about the nutritional benefits of vegetables
Lessons Learned • Menu requires constant revision • Challenge to meet nutritional requirements • Complicated process of creating a 6 day menu • Time intensive • Many different food preferences and expectations • Delicate balance between nutrition and a meal that is tasty, varied, and aesthetically pleasing.
