Jamm Hostetler Minorcan Gopher* Stew First, catch one of the gophers that tear up lawns everywhere. Remove the shell and “diggers”. and bring it home to prepare Cut your gopher meat into multiple two-inch pieces. Simmer until the smell’s a treat, and the toughness ceases. To do so, you’ll be sure to add two cups of water, some salt, and pepper. Just a tad, for every cup of gopher. In a separate pot heat olive oil, and in it brown a chopped onion. Be careful not to let it boil; one would not want an eruption. Pour in one can of tomatoes and finely cut green pepper. If the sauce cooks down too much, more tomatoes should make it better. Once the gopher is thoroughly tender, Thicken with cooked egg yolks mashed in a blender; Pour the completed sauce right on it. then stir it together and you’ve cooked up a hit *All references to “gophers” should be taken as references to gopher tortoises (MKR called them gophers). There’s a big difference!
