Starch • Starchy vegetables are higher in calories than nonstarchyvegetables like: leafy greens, green beans, broccoli, cauliflower, peppers, cucumbers, carrots, mushrooms & celery.
Fibre • Some oligo & polysaccharides are indigestible = dietary fibre. • Found in cell walls of plants • Aid digestion • Prevent colorectal cancer • eat the skin!
