Ugali Ugali is a stiff porridge traditionally served with vegatables and stew. It is a carbohydrate which many people in Tanzania believe will make you strong and give you energy for a long time. Labourers eat a lot of ugali. Ingredients: 750g cornflour 1.9 litres of water Instructions: Add the water to a saucepan and bring to the boil. Slowly pour in the cornflour to avoid lumps from forming. Stir continuously. Add more cornflour until the mixture becomes thick like mashed potato. Cook for a further 3-4 minutes. Serve immediately as an accompaniment to an African stew or soup.
Rice and Beans Instructions: Fry the onions in the margarine Add the green peppers and season with the curry powder, salt and pepper. Add the tomatoes and simmer for 2 minutes. Add the kidney beans, coconut milk and water to the mixture and simmer for 10 minutes. Add the rice and simmer for a further 5 minutes. Ingredients: 125g chopped onion 3tsp margarine 1 tsp curry powder 1 tsp salt ½ tsp pepper 250g chopped tomatoes 625g kidney beans 500ml coconut milk 750ml water 125g cooked rice
Bites Bites are like doughnuts they are fried dough which are usually sweet and eaten with tea or coffee as a breakfast item or snack. Ingredients: Flour Sugar Salt Egg margarine Baking powder Water Milk Instructions: Mix all of the ingredients together. Mould the mixture into your chosen shape. Fry the dough mixture until golden brown.
Pilau rice Ingredients: Rice Beef Salt Oil Pilaumasala Garlic Onion peppers Instructions: Fry beef until cooked for your preference. Put onion in the same pan. Put garlic, peppers and pilaumasala into the pan. Add the salt. Add a little water. Leave for 2 minutes. Add more water, after it has boiled, add the rice. Leave until the rice is cooked. Stir the mixture rigorously to make sure the flavouring is throughout the rice.
Chapati Ingredients: Flour Salt Sugar Water oil Instructions: Mix all of the ingredients together. Roll out the mixture until it is flat and about half a centimetre in thickness. 3. Fry the dough in oil in the frying pan. 4. When golden, leave to cool. Once cool cut into triangular pieces.
Eggy chips Ingredients: Chips eggs Instructions: Fry your chips/ sliced potatoes until they are soft. In a jug, use a fork to whisk together some eggs. Pour this eggy mixture over the chips in your frying pan. When the mixture has solidified like an omelette its is ready to serve.
