Stewed Tomatoes Ingredients:4 large tomatoes2 stalks celery, chopped very fine1/4 bell pepper, chopped very fine 2 cups watersalt and pepper to taste Directions: Peel the tomatoes by soaking them in boiling water for one minute. Gently pull away the skin. Place tomatoes in a large pot and add the remaining ingredients. Cover and boil gently for 15 minutes, until tomatoes are tender.

  3. Salsa Ingredients Directions Use food processer or fine knife to finely dice all produce. Place all ingredients in saucepan. Simmer for approximately 10 minutes. Add more tomatoes as needed for taste. Grab some chips and you’ve got yourself a homemade salsa. Serve warm or chilled. • Tomatoes • 5 cloves garlic • 1 bell pepper • 5 chili peppers • 1 cup cilantro • 2 tsp cider vinegar • 2 tsp chili powder • 1 medium onion • Tomotillos

  4. Easy Eggplant Ingredients • Eggplant • Salt • Pepper • Smart Balance Margarine Omega3 • Pan • Spatula • Knife Directions • Using your knife cut the top of the egg plant off. 2. Next slice the eggplant into as many slices as you can, then into half. 3. After this, line the pan with margarine. 4. Place the egg plant slices into the pan using the spatula. Let them sit for about 3 minutes. 5. Sprinkle salt and pepper onto the egg plant. 6. Turn the egg plant over and let them sit for another 3 minutes. 7. Spread more margarine around the egg plant with the spatula. 8. Sprinkle salt and pepper onto the flipped side of the eggplant. 9. Take eggplant out of pan and enjoy!

Pot it into the crock pot and let it simmer for about 8 hours

  6. Kickin' Collard Greens Ingredients Directions Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt. Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender. • 1 tablespoon olive oil • 3 slices bacon • 1 large onion, chopped • 2 cloves garlic, minced • 1 teaspoon salt • 1 teaspoon pepper • 3 cups chicken broth • 1 pinch red pepper flakes • 1 pound fresh collard greens, cut into 2-inch pieces
