Ensure they are used in a First In First Out order Post Tunnel Oven: • Dump water from sheet pan into receptacle • Place sheet pan on tray, filling both sides Cooler for Large Cakes Depanning queue

  2. Depanning Process: 4. Set up depanning area as shown in picture below - Bread Baskets - Insert Sheets - Foam Carriers 5. Wheel full tray to depanning area (arms length reach for Operator 1) Wheel empty tray to depanning area (arms length reach for Operator 2) Bread Baskets Insert Sheets Foam carriers Full tray Empty tray

  3. 6. Grab tray from rack, set on cart work surface as shown in picture below 7. Dump cake from pan onto foam holder

  4. 8. Flip cake onto permanent foam holder 9. Place cake in bread basket 10. Remove empty sheet pan from table, set another pan on table

  5. 11. When necessary; change bread basket • Place sheet cover on top of cheesecakes for protection
