Background information • Ethiopian dishes are prepared with a distinctive variety of unique spices. • These spices make the food to have a delicious taste. • There are a number of spices prepared locally for cooking different kinds of dishes. Berbere: a popular Ethiopian seasoning prepared from red peppers, garlic, and other spices.

Food Display • A typical Ethiopian Cuisine consists of “Injera” and “Wot”. • wot: these thick stew are the most popular dishes and can be made from meat and, vegetable, or beans. • Injera: is a flatbread made with “Teff” flour, a popular African grain. Injera has a sour flavor and spongy texture which makes it suited to sopping up stews and other wet dishes.

  6. Main types of Ethiopian dishes • Doro wot: chicken dish • Can be made a spicy or mild chicken dish

  7. Ethiopian Main Dish • Kitfo: freshly ground raw, mild, or well-done beef marinated with “Mitmita” (red chili pepper mixed with garlic) • Can be presented with ground spinach with “Ayeab”.

  8. Ethiopian Main Dish • Tibes: cubed tender lamb or beef fried with onion and green paper served with Injera and salad or spicy “Awaze” sauce. • Raw Meat: slices of red meat is served with hot spice, Mitmita.
