Chole Masala: Adding Flavour and Aroma to Your Meal Amritsari Cole, Palak Chole, Achari Chole, Pindi Chole, Methi Chole etcetera are different avatars of which popular North Indian dish? Chole masala, of course! Aromatic with the combined goodness of spices like cumin, coriander, black pepper, nutmeg, star anise, cloves, cardamom and cinnamon, etc., chole masala is a popular dish in Indian cuisine. Among the much-loved curry dishes of North India, no celebrations are complete without chole on the menu. In fact, it is a weekend ritual in most Punjabi homes.
Chole Masala Recipe ½ teaspoon red chilli powder 1 cup chickpeas 3 teaspoon ginger garlic paste 1 teaspoon coriander powder 1 cup pureed tomatoes 1 teaspoon cumin powder 3/4th cup grated onions 1 black cardamom 1 ½ tablespoon chole masala powder 2-3 green cardamom 3 tablespoons oil/ ghee (clarified butter) 1 stick cinnamon 1 teaspoon turmeric powder 1 teaspoon anardana powder
Method 1.Wash the chickpeas thoroughly and soak them overnight in 3 cups of water. 2. In the morning, pressure cook them till soft and tender. 3. Heat oil in a pan. 4. Add the dry spices and sauté till the air is fragrant with the aroma. 5. Add ginger garlic paste and sauté for a minute. 6. Now add the grated onion and fry till golden brown, adding a little water if the mixture starts to stick to the pan. 7. Add the pureed tomatoes and cook. 8. Now add turmeric powder, cumin powder, coriander powder, anardana powder and red chilli powder and stir well.
9. Add the pureed tomatoes and cook. 10.Now add turmeric powder, cumin powder, coriander powder, anardana powder and red chilli powder and stir well. Cook till the ghee/oil starts to separate from the mix. 11. Add this masala mixture to the boiled chickpeas. 12. Add salt as per taste. 13. Pressure cook the chole again. Let one whistle come and then lower the flame and let cook for 10 minutes. 14. Let the steam release, and your chole masala are ready.
