Fixed & Variable Staff Defined • Fixed staff: those that must be filled regardless of the volume of business • Ex: • Executive housekeeper • Assistant executive housekeeper • Supervisors • Department clerk • Variable staff: those positions whose hours are determined by the amount of business • Ex: • Room attendants • Housepersons • Inspectors • Lobby attendants
Staffing Guide • Tools that help the executive housekeeper determine: • total labour hours • number of employees • and estimated labour expense required
Steps to Developing Staffing Guide • Determine the total labour hours for positions that must be scheduled at each occupancy level (multiply productivity standard by number of occupied rooms) • Determine the number employees that must be scheduled to work at each occupancy level. (Divide the number of occupied rooms by the productivity standard) • Calculate the estimated labour expense required to operate the housekeeping department at each occupancy level. (multiply the total labour hours by the average hourly rate for employees)
Tips for Developing Employee Work Schedules • Schedules should: • Cover a full work week • Be posted at least three days before the work week begins • Indicate days off, vacation time, and requested days off • Be reviewed daily in relation to occupancy data • Note any changes directly on the posted copy • Be used to monitor attendance
