Made from milk • Bacteria and enzymes added to milk forms a casein which hardens • This curd is separated from remaining liquid (whey) and is cured or ripened to develop flavor and texture
Kinds of cheese 1. Ripened or non-ripened • -aged/cured • natural/processes • 2. Soft • 3. semi hard • 4. Hard
Pasteurized process cheese • Several cheeses shredded and mixed together with emulsifier. Mixture is heated and stirred which stops ripening • Mild flavor, keeps well • Melts, blends easily in cooking, does not get stringy
When cooking with cheese • 1. Low temperature-keeps from getting tough, fat will not separate • 2. Cut into smaller pieces of shred when blending • 3.“Au gratin” means food is cooked in cheese sauce
Storing cheese • 1. Cover, wrap tightly-keeps it from drying our or absorbing odors • 2. Store in refrigerator • 3. Some cheese served at room temperature so take out of refrigerator about 30 minutes before serving • 4. Soft cheese spoils faster • 5. Cut off mold and use
