  3. Store it right Ice cream is full of sugar, and fat. This has a way of picking up flavours from the air around it, like those in your fridge, even when frozen. Use a tub with a tight-fitting lid to prevent your ice cream from taking on the flavour of the fish or last week's chilli. Place a layer of plastic wrap between your ice cream and the lid for extra protection. Air is also responsible for freezer burn, which desiccates the ice cream surface and crystallises it. A tight lid helps, but harm can also be done by air trapped inside the jar for long periods. Try moving it to a smaller tub while you consume some of your ice cream.
