Wheat Allergy (WA) is a rare allergy which typically presents itself as a food allergy. WA involves an immunologic response, production of IgE antibody, to wheat proteins called gliadins alpha, beta, gamma, and w protein subunits.   1. Are you Suffering from a Wheat/Food Allergy Wheat Allergy (WA) is a rare allergy which typically presents itself as a food allergy. WA involves an immunologic response, production of IgE antibody, to wheat proteins called gliadins alpha, beta, gamma, and w protein subunits. Clinical symptoms depend on the route of exposure (breathing it in while baking, skin contact, or eating it) and may include nasal allergy symptoms, asthma, the spectrum of gastrointestinal symptoms, eczema (atopic dermatitis), hives, and anaphylaxis. The most severe response is exercise aspirin induced anaphylaxis attributed to one omega gliadin that is a relative of the protein that causes celiac disease. Other more common symptoms include nausea, urticaria, atopy. Overall, the prevalence of WA may be as high as 0.5% increasing with age.
