DIRECTIONS: FLOUR TORTILLAS Ingredients: • 2 ½ C Flour • 1 t salt • ½ t baking powder • 2 oz shortening • 2 oz butter • ¾ C WARM WATER • Mix the flour, salt, and baking powder together. • Add the shortening and butter. Cut inuntil dough is mealy, like cornmeal. (Use paddle attachment if using mixer) Better by hand to feel the dough. • Slowly add the warm water a little at a time while mixing. • Blend until smooth and soft. Dough should clean the sides of the bowl yet not be too sticky. • Remove dough to prep table (lightly floured prep area & rolling pin.) • Pinch off amounts of dough equal size (size of golf ball) • Should get a minimum of 10-12 balls of dough. • Roll out each portion with rolling pin to thinly flatten. (Must be thin or they will be too thick to roll once cooked) • Cook each tortilla using medium heat in a sauté pan. Flip when bubbles form. (should get light speckled brown spots throughout) • Do not over cook. Tortillas should be soft and not cracker like.
